This is the best recipe I've got for a stellar Mac and Cheese:

Start by boiling 1 pound of macaroni or your favorite noodle as the package directs.

Meanwhile, make a small cheese sauce by melting 3 Tbs. butter in a saucepan. Add 3 Tbs. of flour. Cook, while stirring constantly to prevent burning, until mixture is combined and free of lumps.

Slowly add 1 1/2 cups of milk, while whisking mixture to prevent lumps. Then add 1 teaspoon Worcestershire's sauce, and about 1/4 cup grated onion. Simmer until thickened. Remove from heat and add 1 1/2 cups of grated colby jack cheese.Stir until cheese is melted.

Pour cheese sauce over the cooked pasta. Stir until coated.

Chop an 8oz. block of colby jack cheese into small cubes. Add the cubes to the pasta mixture and stir.

Pour the whole thing into a buttered casserole dish, cover with foil and bake at 350 degrees F for 30-40 minutes.

Eat.
