Ingredients


250g/9oz macaroni


40g/1陆oz butter


40g/1陆 plain flour


600ml/1pint 1陆fl oz milk


250g/9oz grated cheddar


50g/2oz grated Parmesan











Method


1. Cook the macaroni in a large saucepan of boiling salted water for 8-10 minutes; drain well and set aside.


2. Melt the butter over a medium heat in a saucepan slightly larger than that used for the macaroni. Add the flour and stir to form a roux, cooking for a few minutes.


3. Gradually whisk in the milk, a little at a time. Cook for 10-15 minutes to a thickened and smooth sauce.


4. Meanwhile, preheat the grill to hot.


5. Remove the sauce from the hob, add 175g/6oz of the cheese and stir until the cheese is well combined and melted.


6. Add the macaroni to the sauce and mix well. Transfer to a deep suitably-sized ovenproof dish.


7. Sprinkle over the remaining cheddar and the Parmesan and place the dish under the hot grill. Cook until the cheese is browned and bubbling. Serve straightaway.Need recipe for best macaroni and cheese?
Really Old-fashioned Macaroni And Cheese Recipe





8 oz. uncooked macaroni (long macaroni, if you can find it)


1/2 lb. extra sharp cheddar, grated


1 c. milk


1 T. each: butter and flour


1 t. dry mustard


salt and pepper





Croutons:


1 slice bread, pinched into small croutons


1/2 stick butter





Directions


Preheat oven to 400.





First, make the croutons. Melt the butter in a small saucepan, toss in the bread, and saute over medium heat, flipping and turning, until they are golden and the butter is absorbed. Reserve.





Next, make the sauce. In the same pan, melt the butter. Add the flour and dry mustard and make a roux, turn heat high, and add the milk.





Stir constantly until the sauce begins to boil and thickens. Add the cheese and stir in (it will melt almost immediately). Add salt and pepper to taste (salt may not be needed, depending on the cheese; pepper always is).





Remove from heat.





Cook the macaroni in boiling, salted water for seven minutes, then drain.





Mix with the sauce, and pour into a buttered 8脳8 baking dish.





Cover with the buttery croutons, and bake for about 20 minutes, until bubbly and nice and brown on top.

1/2 packet small macaroni, 1 tin Campbell's condensed tomato soup


1/2lb good strong Cheddar cheese,


2 medium tomatoes


celery salt.


cook pasta until ready, drain, put back into pan, add soup (no water)


add 3/4 of your Cheddar mix well,


put into oven proof dish, top with sliced tomatoes %26amp; rest of the cheese, place under a hot grill until crispy.


serve with celery salt (on the table) try it.
