Anyone have a recipe for macaroni and cheese like ';mom'; used to make?

OLD FASHIONED MAC 'N CHEESE





1 1/2 c. elbow macaroni


4 tbsp. butter, divided


1/4 c. all purpose flour


3 c. milk


1 tsp. dry mustard


3/4 tsp. salt


1/4 tsp. freshly ground pepper


1 1/2 c. shredded sharp cheddar cheese


1/4 c. freshly grated Parmesan cheese


1/3 c. plain dry bread crumbs





Preheat oven to 375 degrees. Cook macaroni in boiling salted water in large saucepan just until tender, about 8 minutes. Drain and rinse under cold water.


Meanwhile, melt 2 tablespoons butter in large saucepan over medium heat. Stir in flour and cook, stirring 1 minute. Gradually whisk in milk, mustard, salt and peppers. Bring to boil, whisking. Boil 1 minute. Remove from heat and whip in cheeses until melted and smooth. Stir in drained macaroni. Pour into shallow 2 quart baking dish. Melt remaining 2 tablespoons butter, stir in bread crumbs and sprinkle over macaroni. Bake 30 minutes. Let stand 10 minutes.

my mom used Kraft or an ';off brand'; of boxed mac and cheese
My mother's was always too runny. I like this one better - and now I am a grandmother!





2 cups dried elbow macaroni (8 ounces)


2 tablespoons butter or margarine


2 tablespoons all-purpose flour


1/8 teaspoon black pepper


2-1/2 cups milk


1-1/2 cups shredded cheddar cheese (6 ounces)


1-1/2 cups shredded American cheese (6 ounces)





Cook macaroni according to package directions. Drain; set aside.





In a medium saucepan melt butter and stir in flour and pepper. Add milk all at once. Cook and stir over medium heat until slightly thickened and bubbly. Add cheeses, stirring until melted. Stir in cooked macaroni. Transfer mixture to a 2-quart casserole.





Bake, uncovered, in a 350 degree F oven for 25 to 30 minutes or until bubbly and heated through. Let stand for 10 minutes before serving.
Boil up the noodles as directed.


Add milk, butter %26amp; cheese to the noodles when they are done (and drained).


I never had the blue %26amp; yellow box till I was 17!

my mom use to make hers just like the recipe ';smart alec'; put on here. delicious.
melt 3 tablespoons butter in a pan heated to medium high heat (or, just use 3 tablespoons olive oil). sprinkle 3 tablespoons flour into the melted fat %26amp; whisk until smooth. cook for 2-3 minutes, then add 3 cups hot milk, whisking constantly to prevent lumps. add salt %26amp; pepper to taste and 1 teaspoon dry mustard. cook, stirring constantly, until mixture thickens to coat the back of a spoon. take off the heat and add 2-3 cups shredded cheese of your choice (i like sharp cheddar or gruyere, or a comination of the two), stir until melted. in the meantime, cook a package of elbow macaroni per the package instructions. drain %26amp; place into a buttered 13x9 pan (glass or light colored is best). pour cheese sauce over noodles %26amp; shake lightly or stir carefully to distribute the cheese. top with 1/2 cup shredded cheese (optional) and sprinkle with paprika (also optional) and bake for 20 minutes in a 350f oven, covered with foil. remove foil %26amp; bake for an additional 10 minutes, or until top browns slightly. remove from oven %26amp; let sit for 10-15 minutes before serving to let it set up.
my mom just cooked pasta, and added 1/3 cup of milk and about a quarter of a block of valeeta cheese mix and melt together and voila.

DIRECTIONS





1. Cook macaroni according to the package directions. Drain.


2. In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well.


3. Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.


4. Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve.

HA HA -- just go onto a receipe site and type in ';old fashioned macaroni and cheese'; and you'll find hundreds of them.
Italian Style Macaroni and Cheese With Spicy Chicken Italian Sau:





A delicious American dish with a Italian twist to it. DELICIOUS.





30 min 25 min prep


3-4 servings





1 tablespoon butter or margarine (approx)


3-4 cups milk (approx)


8 ounces macaroni and cheese mix (uncooked)


italian seasoning


salt


pepper


6 spicy italian chicken sausages


1 1/2 lbs Fontina cheese


salt and pepper, to taste





1. Put sausages in stir fry pan with a little water.


2. Poke holes in sausages with fork to cook the inside a bit.


3. When sausage is completely cooked, drain any remaining water, remove and cut up sausages.


4. Add a little oil to the pan, return chopped sausages and saute until golden brown.


5. In another pot, melt the butter and add the flour -- cook slowly, stirring constantly until the roux is a light brown.


6. Cut up the cheese and add to the roux.


7. Add remaining milk slowly, stirring constantly.


8. Add Italian seasoning (to taste).


9. While the sausage and roux are cooking, place macaroni noodles in boiling water and cook until al dente.


10. Drain well, add 1 cup of milk, butter and cheese mix from the box; stir until cheese is incorporated.


11. Add prepared macaroni and cooked sausage to the roux; stir gently to mix thoroughly.


12. Add salt and pepper to taste and serve hot.
