LADY AND SON'S MAC %26amp; CHEESE

by:Paula Deen

Ingredients:

4 cups cooked elbow macaroni, drained

2 cups grated Cheddar

3 eggs, beaten

1/2 cup sour cream

4 tablespoons butter, cut into pieces

1/2 teaspoon salt

1 cup milk

Preheat oven to 350 degrees F.

Once you have the macaroni cooked and drained, place in a large bowl and while still hot and add the cheddar. In a separate bowl, combine the remaining ingredients and add to the macaroni mixture. Pour macaroni mixture into a casserole dish and bake for 30 to 45 minutes. Top with additional cheese if desired.

Happy cooking!
This is not your typical mac %26amp; cheese recipe. Last night when I was looking in my fridge for things to make dinner I saw I had some awesome looking broccoli and some slightly past it's prime spinach. My hubby wanted pasta so I thought I'd make a soup. Half way through I switched tactics and came up with this awesome and actually quite healthy mac and cheese. Hope you like it.

P.S. I've posted the link to another recipe for a traditional mac and cheese recipe which is the one I always use.

Sweet Loreto's Green Mac and Cheese

1 medium onion, chopped

2 ribs celery, chopped

1 large or 2 small cloves of garlic chopped

1 large head of broccoli, florets cut into bight size pieces, stems roughly chopped,

2 cups spinach

2 tablespoons cream (sour or heavy), optional

1 cup Monterrey jack cheese or any other cheese that melts, optional (I used Mexican Manchego cheese which is made from cow's milk instead of the traditional sheep's milk)

2 tablespoons finely grated parmesan cheese, optional

1 tablespoon olive oil

1 tablespoon butter

1and 1/2 cup chicken or vegetable broth. Can also use water.

salt, pepper, and an all purpose seasoning like Mrs. Dash to taste

1- Place a large pot full of salted water on to boil. Cook macaroni or other small pasta until al dente. Drain and set aside.

2- In a large pot over medium flame, heat oil. When oil starts to smoke add butter and onions. Saute until butter has melted and onion is translucent (about 3 - 5 minutes). Add celery and saute for 2 more minutes. Add garlic and broccoli STEMS ONLY. Saute for an additional 2 or 3 minutes.

3- Add the chicken broth and cover. Cook broccoli stems until just tender. Add the spinach and stir until wilted. Using an immersion blender puree this mixture (you can also use a regular stand up blander) to desired consistency, I left small chunks in mine. Season with salt, pepper, and seasonings.

4- Add cream and monterrey cheese if adding. Add broccoli florets and heat through until cheese has melted and the florets are tender.Add cooked pasta and toss. Serve and top with parmesan cheese.

Enjoy.

You can also find a box at the supermarket with everything in it. All you do is mix. See directions on the box.

And you can also buy it precooked in the freezer section at the supermarket. Just heat in the microwave.
Though I've never made it myself , I've seen it done. First boil the elbow macaroni, don't over cook. Then grade some real cheese of your choice.Don't hold back you need a lot. Strain the noodles. In a glass baking dish add the pasta and cheese in layers with the last layer being the cheese.Next bake @ 350 for 30 min. or until the cheese is a little crisp on the edge. I've also tried it with bacon or ground beef, not the healthiest but it is comfort food. Hope this helps.Oh it tastes nothing like the one in the box.
Check out this link, I've saved it in my favorites for years after trying them. Never knew if they may come in handy again someday.
