Hi everyone, Can someone please give me a good macaroni and cheese recipe. They other day I got this box with the mix inside and I did it. My daughter just loved it.
I would like to make it for her again but from scratch.

First you need to make a rue. It's melted butter and flour. Melt the butter, then gently stir in enough flour to make a paste, one teaspoon at a time. Then, add milk gradually, like a quarter cup at a time and whisk it in. Bring to a boil and add velveeta cheese (large quantitiy, but cut up in small pieces) and stir until saucy. (too thick, add more milk, too thin, add more cheese).
When done with sauce, add cooked noodles and let sit for a while to get the cheese sauce inside each macaroni.
Add a few drops of milk when reheating. Mother never gave me exact ingredients. It's just by looks. I make it in a stock pot, tho.

Simple microwave cheese sauce
1 large tablespoon of butter or marge
1 large tablespoon of cornflour
Put both in a microwavable jug and heat till butter has melted - mix well with flour.
Add a little from a pint of milk and whisk till smooth. Carry on adding a little milk at a time until you've added the whole pint.
Cook at full power for a minute at a time, stirring each time, till it's cooked and smooth.
Add grated cheese (cheddar is best) and stir till melted.
A dollop of English mustard makes it extra tasty and if you have kids and want to get more veg down them, you can cook and blend a butternut squash, some carrots, some peppers etc and add that to the cheese sauce. My kids love this.
Cook your pasta, add the cheese sauce and bake till golden on top.

I would say that if your daughter liked the box mix, then keep using it. It's more convenient, and much more thrifty. You can always add stuff to the box mix tho. I do that all the time. Brown ground beef with onions, green pepper and garlic, add one can of tomato soup, 3 tablespoons parmesean cheese and simmer for about 20 minutes. Alternate layers with cooked mac and cheese. Top with bread crumbs, bake fo about 35 minutes at 350, and serve. It's good and kids love it.
no matter how many ways we've tried, you just CANNOT match the cheese in Kraft Dinner.............
Velveeta works pretty good tho. It's already a sauce, so you just have to add it to your macaroni.
have you tried macaroni with tomatoes? that one goes over really well here (and it's cheap too) :):)
Cook the macaroni in the usual way. Make a cheese sauce and mix the two together. Top with grated cheese and bake in the oven for 10-15 mine. Do not ever use packets of mix....
