try to use carnation evaporated milk with your mac n cheese they tend to be creamier..use two kinds of cheese like mild cheddar and ricotta (or whatever you prefer) and if you're going to bake them sprinkle the top of it with parmesian cheese...mac n cheese tend to thicken as it cool so try to put a little more milk (a little soupy) for creamier effect...
I use Kimberly's recipe ALL the time. Everyone loves it. Seriously the creamiest mac and cheese ever and even tastes delicious reheated in the microwave :)
Creamy Macaroni and Cheese





Ingredients


1 tablespoon salt


1 pound elbow, shell or other bite-size shaped pasta


2 (12 fluid ounce) cans evaporated milk


1 cup chicken broth


3 tablespoons butter


1/3 cup flour


1 1/2 tablespoons Dijon mustard


1/2 cup grated Parmesan cheese


Freshly ground black pepper


1 pound grated extra-sharp cheddar cheese





Method


Bring 2 quarts of water to boil in large soup kettle. Add salt and pasta. Using package directions as a guide, cook until al dente. Drain. To prevent sticking, drain and immediately pour onto a large lipped baking sheet and let cool while preparing sauce.


Meanwhile, microwave the milk and chicken broth in a 4-cup Pyrex measuring cup or bowl until hot and steamy (not boiling). Melt butter in the empty pasta pot; whisk in flour, then hot milk mixture. Continue to whisk until thick and bubbly, 3 to 4 minutes. Whisk in mustard, Parmesan and pepper. Turn off heat, stir in cheddar until melted.


Add drained pasta (and optional flavoring ingredients, see notes) to sauce, and stir until everything is well combined over low heat. Stir to heat through, and thin with a little water if the sauce is too thick. Serve hot.
QUICK AND EASY MAC AND CHEESE





1 sm. box elbow macaroni


2 heaping tbsp. butter


1 sm. box Velveeta cheese


2 tbsp. milk





Cook macaroni in salted water until tender, drain well and return to pot. Add milk, butter, sliced cheese. Heat over a low fire until all cheese is melted. Stir constantly. Pour into dish and let set 3 to 5 minutes before serving.
Mom's Creamy Baked Mac %26amp; Cheese:





1 hour 10 min prep


10 servings





2 cups milk


3 tablespoons margarine, melted


2 tablespoons all-purpose flour


1/2 teaspoon salt


1/2 teaspoon pepper


3 eggs, beaten


3 cups cooked elbow macaroni


2 1/2 cups shredded cheese (I use Velvetta)


3/4 cup breadcrumbs or crackers





1. Preheat oven to 350 degrees.


2. Combine first six ingredients and beat until smooth, using a wire whisk.


3. Layer in a greased baking dish alternating with a layer of macaroni then a layer of cheese.


4. Pour milk mixture over macaroni;sprinkle with bread or cracker crumbs.


5. Bake covered for 50 minutes.


6. Uncover during the last 5 min to crisp the top.
I use the Kraft Deluxe Mac and Cheese and make it according to box, then I add a handful of sharp grated cheese 3/4 c. milk and l cup sour cream. Transfer to cassarole dish %26amp; top w/grated cheese and bake for about 20 minutes at 350. My kids have been raised on this recipe and still ask for it.
Try substituting a little sour cream in for half of the milk. My friend loved this one.
CREAMY MACARONI AND CHEESE





A classic creamy macaroni and cheese recipe that鈥檚 made with American cheese.





Preparation time: 20 min Baking time: 30 min


Yield: 6 (1-cup) servings








5 1/2 ounces (1 1/2 cups) dried uncooked elbow macaroni


1/4 cup LAND O LAKES庐 Butter


3 tablespoons all-purpose flour


1 1/2 teaspoons dried mustard


3/4 teaspoon onion powder


3/4 teaspoon salt


1/8 teaspoon pepper


3 cups milk


1/2 pound (2 cups) slice LAND O LAKES庐 Deli American Cheese, cubed


4 ounces (1 cup) LAND O LAKES庐 Cheddar Cheese, shredded








Heat oven to 350掳F. Cook macaroni according to package directions. Drain.





Melt butter in 3-quart saucepan until sizzling; stir in flour and seasonings. Add milk; cook over medium heat, stirring constantly, until mixture boils and thickens (5 to 7 minutes).





Reduce heat to low; stir in cheese. Cook until cheese is melted (3 to 5 minutes). Add cooked macaroni; mix well.





Spoon into ungreased 2-quart casserole. Bake for 30 to 35 minutes or until heated through.





Recipe Tip


Add 1 cup chopped cooked ham, 1/2 cup chopped red or green bell pepper or 1/2 cup drained mushroom stems and pieces.

1 pkg. (225 g) KRAFT DINNER Macaroni and Cheese


12 frozen prepared meatballs


1-1/2 cups pasta sauce


1/4 cup (1/4 of 250-g tub) PHILADELPHIA Herb %26amp; Garlic Cream Cheese Spread








COOK Macaroni in medium saucepan as directed on package; drain. Meanwhile, place meatballs in microwaveable bowl. Microwave on HIGH 2 min.


RETURN macaroni to saucepan; stir in Cheese Sauce Mix. Add pasta sauce and cream cheese spread; cook on medium heat 2 min. or until cream cheese is completely melted and mixture is heated through, stirring occasionally.


ADD meatballs; stir gently. Cook 1 min. or until heated through, stirring frequently.
Please PEOPLE. Stop using American cheese and velveeta. SICK!
