Baked Macaroni and Cheese
1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup panko bread crumbs
Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.Best homemade macaroni and cheese recipe??
Th way I cook mine is:
Cook the noodles til almost completely ready to eat. Half way thru I put some frozen spinach in with the noodles. Drain.
I take a can of tomato soup, spicy tomatoes, sour cream, and spices, such as garlic, oregano and pepper and mix them together in a crock put.
I grate a pound of cheese, set a side.
I then pour the noodles and spinach in with the sauce and mix til thoroughly covered. Then I sprinkle (1/2) in some cheese. Mix thil it is all thru the the noodles and then sprinkle the remaining cheese on top and cook on low til melted.
Very yummy.
Ok, I died laughing when I saw this recipe on Paule Dean's Home Cooking as we called it ';The Heat Attack Special';. You take your Mac and Cheese (must have been made with real cheese as it was solid when chilled), cut it into squares and wrap a raw slice of bacon around it (spear with a toothpick). Then dip it into flour, then beaten eggs, then bread crumbs. Deep fry for about 4-5 minutes. Enjoy feeling your ateries clog. It actually sounds really yummy but just the though of it - yikes!! Hope you like it!!

The sourcream and eggs make it into a real casserole. I like it topped with breadcrumbs.
I make mine with a basic white sauce to start with then add what ever type of cheese I have on hand once sauce is thick and noodles are almost done and drained then mix together and cover to bake. Add a topping of cheese the last 15 minutes and leave uncovered.
