What are some great macaroni and cheese recipes?

Not a fan of ultra creamy macaroni...and I don't like onions, lol. Any ideas? What are some great macaroni and cheese recipes?
Here is a good recipe for macaroni and cheese casserole. It turns out firm and delicious! I use 3 cups of cooked macaroni, 2 cups of grated or shredded cheddar cheese or a combination of a cheddar blend. (Keep an extra 1/2 cup cheese to the side for topping.) 1/4 cup of cold margarine or butter, cut into small pieces,1 cup milk, 1/2 tsp. salt, 1/4 tsp. black or white pepper, ground, 1 1/2 cups of slightly crumbled saltine crackers, 4-6 strips of bacon. Mix the salt and pepper in with the cooked macaroni. Layer equal amounts of macaroni, margarine, cheese, and crackers, IN THAT ORDER, 2 or 3 times, in a generously greased casserole dish. (I use margarine or butter for better flavor.) Most casserole dishes will allow for two to three layers of all the ingredients. Depending on how shallow, deep, or wide the dish is you are using. I suggest a 3 quart size. When you have used up all macaroni, margarine, crackers and 1 1/2 cups of cheese, pour the milk slowly over the top of the macaroni, cheese and cracker layers in a circular motion. Try to pour over the surface of all layers, moistening most of the macaroni and crackers below. Then top all with the reserved 1/2 cup of cheese. Then place bacon strips gently across the top of the cheese. Bake uncovered, in a 350 degree (F) oven for 35-40 minutes. Casserole is done when bacon is done and cheese is forming a slightly browned crust on top. You can also add a dash of salt and pepper over the cheese and bacon before baking too. Some like it with onions. If you add them, I suggest no more than 1/3 cup of finely chopped onions, to divide throughout the layers. You can also substitute 1/2 tsp. of onion powder (not onion salt) for real onions for the flavor but not the texture. Just mix it in when you mix in the salt and pepper with the macaroni. Since you mentioned that you don't like onions, you are welcome to omit them! Hope you enjoy this recipe! It is an old Family favorite! What are some great macaroni and cheese recipes?

Can't go wrong with the Kraft M%26amp;C. Once it's all mixed together, I add a little extra milk and or butter (it'll dry out some in the oven if you don't) some (drained) canned tuna (in water, not oil) and some sliced black olives, mix it up and throw it in a casserole, sprinkel some bread crumbs or sunflower seeds on the top and throw it in the oven at 350 for about 20-30 minutes. Mmm, good. (I usually put those canned, french fried onions on the top, but you said you didn't like onions)

EDIT: Lady L!!! Potato Chips! I totally forgot about those! Thank you, thank you, thank you, I know what I'm making for Comfort-food Sunday next week! Mwahhh! %26lt;%26lt;big ol' kiss on the cheek.
I agree with Cappo, my mom once did end of the month casserole. It was boxed mac and cheese canneed chicken or tuna, peas and then she put the tail end of a bag of BBQ chips on top and baked. Lovely!
