Simple but delicious macaroni and cheese recipes?

I want to make a dinner for me and my boyfriend this next weekend and he loves mac and cheese. Any good recipes?? i want to make a more mature adult version of it. Not just noodles out of a box with cheese. But i dont have a bunch of stuff to work with.Simple but delicious macaroni and cheese recipes?
I think baked mac and cheese is automatically better and more adult than anything that's orange, out of a box, and only cooked on top of the stove.





First of all, try something other than elbow macaroni. Will he accept a different shape, like rotini, penne, fiori, or ditalini? Cook whatever pasta you think he'll like until it's al dente, not completely mushy, because you're going to cook it some more in the oven. Drain the cooked pasta, but do not rinse it! That little bit of starch helps thicken the sauce.





You can add chopped cooked broccoli or chopped cooked bacon or ham (or both veg and meat) if you want to make this a full meal casserole. A nice touch is some browned bread crumbs; just melt some butter in a pan and toss in some fresh or dried bread crumbs, mixing them around off the heat until the melted butter is absorbed.





Preheat your oven to 350 degrees and grease a casserole dish or baking pan (or spray it with cooking spray like Pam).





For the sauce, make a simple white sauce. You'll also want to have some shredded or chopped cheese, at least one cup, more if you like it really cheesy. It doesn't all have to be cheddar! Try a little bit of blue cheese, hot pepper cheese, or cream cheese, maybe a container of Boursin or Alouette, both of which come in a lot of different flavors. Don't forget grated Parmesan cheese as well for sprinkling on the casserole before you put it in the oven!





Now finely chop a small onion, if you're both okay with onion, or use dried minced onion or onion powder. Measure out one cup of milk. Melt two tablespoons of butter or margarine over medium heat in a saucepan, throw in the onion, a little bit of salt, and some ground black pepper. Once the onion is cooked and limp but not brown, add in two tablespoons of regular white flour. Stay with the pot and stir slowly, allowing the flour and melted butter to mix into a paste and allow it to brown slightly. Slowly pour in the milk, continuing to stir until the milk and flour paste start to thicken. Take your pan off the stove and add your assorted cheeses, continuing to stir until they're melted, or just sort of mix them in quickly if you want the flavors to change subtly with each bite.





Mix in the broccoli and bacon or ham, if you're using them, then add the cooked pasta to the cheese sauce, right into the saucepan you cooked it in. Give it a good stir, then pour it all into the prepared baking dish. (If you used a really small pan for the sauce, put some of the pasta in the dish, add a layer of sauce, more pasta, more sauce, etc, ending with a final layer of sauce.) Sprinkle all over the top with Parmesan cheese and the buttered bread crumbs. Pop into the oven and let it bake for about half an hour.

Just wanted to let you know that the broccoli can also be chopped fresh and cooked in the same water as the pasta... no need to mess up more pans than you have to! Report Abuse

Stove Top Mac and Cheese

1/2 pound elbow macaroni


4 tablespoons butter


2 eggs


6 ounces evaporated milk


1/2 teaspoon hot sauce


1 teaspoon kosher salt


Fresh black pepper


3/4 teaspoon dry mustard


10 ounces sharp cheddar, shredded








In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat.


Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy.

Mac 'N Cheese with Bacon and Cheese

Yield 6 to 8 servings


Ingredients





* Kosher salt


* 1 pound elbow macaroni


* 4 cups milk


* 2 or 3 sprigs thyme


* 4 cloves garlic, smashed and divided


* 3 tablespoons unsalted butter


* 3 tablespoons all-purpose flour


* 5 1/2 cups shredded sharp white Cheddar


* Freshly ground black pepper


* 1/4 cup chopped flat-leaf parsley


* 4 slices bacon, cut crosswise into thin strips


* 1 large onion, diced


* 2 garlic cloves, smashed


* Leaves from 1/4 bunch fresh thyme





Directions





Bring a pot of salted water to a boil over high heat. Add the macaroni and cook for 8 to 9 minutes, until al dente. Drain.





Preheat the oven to 400 degrees F.





In a small saucepan heat the milk with the thyme sprigs and 2 garlic cloves. Melt the butter in a large, deep skillet over medium-high heat. Whisk in the flour and cook for about 1 minute, stirring constantly, to keep lumps from forming. Strain the solids out of the milk and whisk it into the butter and flour mixture. Continue to whisk vigorously, and cook until the mixture is nice and smooth. Stir in the 4 cups of the cheese and continue to cook and stir to melt the cheese. Season with salt and pepper. Add the cooked macaroni and the parsley and fold that all in to coat the macaroni with the cheese mixture. Scrape into a 3-quart baking dish and sprinkle with the remaining 1 1/2 cups cheese. Bake for 30 minutes, or until hot and bubbly.





While that bakes, heat a saute pan. Add the bacon, render the fat and cook until crispy. Add onion, garlic and thyme leaves and cook for about 5 minutes to soften the onion. Season with salt and pepper.





To serve, scatter the bacon mixture over the mac and cheese. Use a big spoon to scoop out servings, making sure you get some of the smoking bacon mixture on each spoonful.
1. Cook two boxes of macaroni(follow directions on box)


2. Add about 1 1/2 cups milk and two eggs ( mix eggs and milk well, before adding )


3. Pour a small amount into a small alunimum pan


4. Then add a layer of cheese


5. Next add about six slices of butter or margine atop (repeat this step until the pan is about an inch away from being full)


6. Pour in more milk all the way to the top of the macoroni.


7. Cook on 425 F until cheese is melted and top is a light crusted brown.





Serves about 15
okay, take a table spoon of flour, a table spoon of any cream (preferably heavy cream, but half and half works, or light cream, or wipping cream) , take a wisk, and wisk that togeth until no lumps, then take about half a cup of milk, or a little less depending how much your making, I make this for about 5 people, then take sharp cheddar cheese and depending if you like your sauce thick, or not I take about 20 or 30 slices of cheddar cheese, first to go in the pan is the flour, and cream you wipped up, and then the milk, and then the cheese, my mom also uses as a secret ingrediant, a pinch of powdered mustard. cook it on a low setting or else the flour burns, and doesn't taste good.
erm i love to cook add some flour into a pot and add in about 3 times as much milk then heat gently ( stiring all the time ) untill its gone to no bits and add in about 50 grams of cheese maybe more if you want and heat untill gose to like a sauce not water but not paste in the middle kind of if u get me and to the pasta and add one tin of tuna to it tuna is opptional and sprinkel cheese over top put in over for few mins to crisp cheese ( optional)
Kraft mac and cheese, ground up hamburger meat, and some tomato sauce. or ketchup, that works too
