Homemade macaroni and cheese recipes?

This is a very luxurious and rich recipe for mac %26amp; cheese and one of my favorites





Macaroni %26amp; cheese





Ingredients


8 ounces cavatappi, macaroni, or other tube-shaped pasta


1/2 teaspoon coarse salt, then more to taste plus more for cooking pasta


3 1/2 tablespoons unsalted butter


1/2 cup finely chopped shallots


2 tablespoons all-purpose flour


1 1/4 cups dry white wine (Sauvignon blanc is my ';go to'; dry white when cooking)


2/3 cup heavy whipping cream


7 ounces gruy猫re, grated


3 ounces aged gouda, grated


2 tablespoons plus 1 teaspoon minced fresh chives


1 tablespoon Dijon mustard


1/8 teaspoon cayenne, then more to taste


1/8 teaspoon freshly ground nutmeg, then more to taste, up to 1/2 teaspoon


4 ounces crusty sourdough bread (about 1/4 loaf), torn into large pieces





Method


Heat oven to 400掳. Cook pasta according to package directions in a large pot of boiling, well-salted water until tender to the bite, 7 to 12 minutes. Drain, but do not rinse.





In a large frying pan over medium-high heat, melt 2 tablespoons butter. Add shallots and cook until light golden, about 3 minutes. Sprinkle shallot-butter mixture with flour; cook, stirring often, 1 minute. Add wine and stir, picking up any browned bits from the bottom of the pan. Add cream and stir well. Sprinkle in cheeses, one large handful at a time, stirring until each handful is mostly melted before adding the next. Stir in 2 tablespoons chives, mustard, 1/4 teaspoon salt, cayenne, and nutmeg. Stir cooked pasta into cheese mixture, then pour all into a 2 quart baking dish.





In a food processor, pulse bread with remaining 1 1/2 tablespoon. butter, 1 teaspoon chives, and 1/4 teaspoon. salt until coarse bread crumbs form. Sprinkle bread crumbs over pasta and cheese and bake until top is browned and cheese is bubbling, 15 to 20 minutes.Homemade macaroni and cheese recipes?
1/2 cup butter or margarine


1/2 cup all purpose flour


1/2 teaspoon salt


1/2 teaspoon black pepper


2 cups half and half


2 cups milk


2- 10 oune blocks charp cheddar cheese shredded


1-10 ounce block extra sharp cheddar chesse, shredded


1- 16 ounce package elbow macaroni, cooked





Melt butter in large skillet over medium heat. Gradually whisk in flour until smooth; cook, whisking constantly, about 2 minutes. Stir in salt and next 3 ingredients. Gradually whisk in half and half and milk; cook, whisking constantly, 8 - 10 minutes or until thickened.





Stire in half of sharp cheddar cheese. Stire in extra shart cheddar cheese until smooth. Remove from heat.





Combine pasta and cheese mixture and pour into lightly greased 13 x 9 inch baking dish.





Sprinkle with remaining sharp cheddar cheese.

Macaroni and Cheese


Ingredients


鈥?2 cups uncooked elbow macaroni (an 8-ounce box isn't quite 2 cups)


鈥?4 tablespoons (1/2 stick) butter, cut into pieces


鈥?2 1/2 cups (about 10 ounces) grated sharp Cheddar cheese


鈥?3 eggs, beaten


鈥?1/2 cup sour cream


鈥?1 (10 3/4-ounce) can condensed Cheddar cheese soup


鈥?1/2 teaspoon salt


鈥?1 cup whole milk


鈥?1/2 teaspoon dry mustard


鈥?1/2 teaspoon black pepper


Directions


Boil the macaroni in a 2 quart saucepan in plenty of water until tender, about 7 minutes. Drain. In a medium saucepan, mix butter and cheese. Stir until the cheese melts. In a casserole dish combine cheese/butter mixture and add the eggs, sour cream, soup, salt, milk, mustard and pepper and stir well. Then add drained macaroni and stir again. Set the oven for 350 Sprinkle some extra shredded cheese on top put in oven and bake for 30 minutes.
