Good macaroni and cheese recipe?

Anyone have a good macaroni and cheese recipe? I want a down-south stick to your ribs kind of macaroni, NOT out of the box or just throwing butter and cheese in a bowl. Please don't post anything you haven't tried or had. ThanksGood macaroni and cheese recipe?
Baked Macaroni and Cheese:





This recipe is especially appealing to children.





16 ounces uncooked large elbow macaroni


1/2 cup butter or margarine


1/3 cup all-purpose flour


2 cups milk


3 cups (12 ounces) shredded Cheddar cheese, divided


1 (12-ounce) container small-curd cottage cheese


2 large eggs, lightly beaten


1 teaspoon salt


1/2 cup dry breadcrumbs


1 teaspoon Greek seasoning





Cook pasta according to package directions; drain.





Melt butter in a Dutch oven over low heat; whisk in flour until smooth. Cook 1 minute, whisking constantly. Gradually whisk in milk; cook over medium heat, whisking constantly, until mixture is thickened and bubbly. Stir in 2 cups Cheddar cheese and next 3 ingredients. Stir in pasta.





Spoon mixture into a lightly greased 13- x 9-inch baking dish. Top with remaining 1 cup Cheddar cheese. Combine breadcrumbs and Greek seasoning; sprinkle over cheese.





Bake at 350掳 for 25 minutes.

Try boiling and draining your noodles then adding milk, butter, salt, pepper and white cheddar. The white cheddar gives it a wonderfully unique taste. You can also add some diced ham or bacon for a twist.
HOMEMADE MACARONI %26amp; CHEESE





3 tbsp. butter


1/4 c. flour


1 tsp. salt


1/2 tsp. dry mustard


1/4 tsp. pepper


2 1/2 c. milk


2 c. Cheddar cheese, grated


1/2 lb. Velveeta cheese


1 c. Mozzarella cheese


1 (16 oz.) box elbow macaroni





In large saucepan, melt butter over low heat. Stir in flour, salt, mustard and pepper until smooth; take off heat. Little by little, stir in milk until smooth. Stir constantly for 10 minutes on heat until thick; take off heat. Stir in 1 1/2 cups Cheddar cheese, Velveeta cheese and Mozzarella cheese until melted. Put cooked macaroni in a greased casserole dish, pour cheese mixture over and mix well. Sprinkle paprika and leftover Cheddar cheese on top. Bake at 375 degrees for 20 minutes.


Recipe can be halved.

1 1/2 c. elbow macaroni


4 tbsp. butter, divided


1/4 c. all purpose flour


3 c. milk


1 tsp. dry mustard


3/4 tsp. salt


1/4 tsp. freshly ground pepper


1 1/2 c. shredded sharp cheddar cheese


1/4 c. freshly grated Parmesan cheese


1/3 c. plain dry bread crumbs





Preheat oven to 375 degrees. Cook macaroni in boiling salted water in large saucepan just until tender, about 8 minutes. Drain and rinse under cold water.


Meanwhile, melt 2 tablespoons butter in large saucepan over medium heat. Stir in flour and cook, stirring 1 minute. Gradually whisk in milk, mustard, salt and peppers. Bring to boil, whisking. Boil 1 minute. Remove from heat and whip in cheeses until melted and smooth. Stir in drained macaroni. Pour into shallow 2 quart baking dish. Melt remaining 2 tablespoons butter, stir in bread crumbs and sprinkle over macaroni. Bake 30 minutes. Let stand 10 minutes.





Makes 8 servings.
BAKED MACARONI AND CHEESE





2 tsp. grated onion


1/2 lb. grated sharp cheese


1 (8 oz.) pkg. macaroni


1/2 c. buttered crumbs


Paprika


2 c. med. white sauce





WHITE SAUCE:





3 tbsp. butter


3 tbsp. flour


1/4 tsp. salt


1/8 tsp. pepper


1 c. milk





Makes 1 cup.


Add onion and half the grated cheese to white sauce. Blend well. Cook macaroni, drain and rinse. Place in alternate layers with sauce in a buttered casserole dish. Sprinkle with crumbs, remaining cheese, and paprika.





Bake uncovered in 375 degree oven for about 25 minutes or until crumbs are browned.

This recipe is medium spiciness. For mild, omit the jalapeno peppers and crushed red pepper.





1-lb cooked elbow macaroni (cooked 2 minutes less than al dente)


1-lb sharp cheddar cheese, shredded


2 cups milk


2 tbs all-purpose flour


2 tbs. olive oil


2 pickled Jalapeno peppers, chopped


1 tbs. Mexican chili powder


2 tbs. Worchestershire sauce


2 cloves garlic, chopped fine


1/2 tsp. salt


1/2 tsp. black pepper


1/4 tsp. crushed red pepper





Heat oil in a 4-qt pan on medium heat. Add the flour and stir until smooth. Add the milk and stir until thickened. Add everything except the cheese and macaroni and stir to mix well. Gradually add the cheese while stirring. When smooth, adjust seasoning, then blend in the macaroni. Cover pan, bake at 350 deg for 30 minutes. Uncover pan, bake 10 minutes or until brown on top and bubbly.





Makes 4 servings.

my mom makes homemade macaroni and cheese. She cooks the noodles and when they are done she puts cheese on it an it melts. Yum!!
